three days left til Christmas! i spent my day decorating and packaging cookies.
i used the basic royal icing recipe, modified slightly for ease of piping, and allowing for the size of the eggs i used.
1. beat the 2 egg whites in a mixer on low speed, then medium speed, until fluffy.
2. add sugar spoonful by spoonful, observing texture while the mixer runs.
3. add the vanilla extract when icing is almost done.
more sugar may be added to thicken the icing if it is runny.
4. colour batches of icing as you wish! the more the merrier (;
